Can I name a font like "G&S" and have full compability?

A quick check on myfonts.com shows fonts with ampersands in the name.0

This depends on which "name" or names you mean.
For example, you cannot have an ampersand in the PostScript name.
I don't know about name ID 1. You should be safe on name ID 17.
Last time I checked, even accented characters were not 100% safe in name ID 1.
