Examples of Non-Traditional/Unique Variable Fonts?

I am looking for examples of variable font products, which posses
axis outside of the weight/width realm. Doing some research to see
examples of what can be done and how far the boundaries have been
pushed. Not exactly the easiest search query, thought y'all might be a
good resource.

Well, the Google Fonts axis registry is used pretty much entirely for axes they ship in actual fonts in the Google Fonts service. See:

or more specifically, the .textproto (and .svg illustrations) at:

Another example: my variable font "Crosswinds" available on daFont. Axis is the wind.

What Matthew said. See especially the “unusual variation” tag for “typefaces that use font variation technology for design characteristics beyond the typical implementations of weight, width, slant, etc.”
