It doesn't matter what you change, the point is if the end-result is a font or not. (Some EULAs actually do proscribe even converted-to-outline modification, but thankfully those are pretty rare.)1 -

If you step back you might realize that the way type designers want the apostrophe (and the quotes) to curl is a bit OCD... Especially in logos there's so much room for fruitful play. BTW does uni201…1 -

Basically it's a matter of thresholds: when they're close "enough", snap them; but don't make that an objective of itself.2 -

To me «L'être» and «l'âge» in the first line are indeed too tight... but «s'est» and «o'clock» in the second line are too loose. :-/6
